Growing up I don’t remember my Mother baking or cooking anything complicated or time consuming. Taking care of her husband and seven children may have prevented her from doing as much as she’d like, and she also lacked the interest. She would bake cookies from time to time, mostly peanut butter or oatmeal, or even a banana cake with peanut butter frosting for one of our “family reunion” picnics during the summer months. If she baked a pie it would be lemon meringue, her personal favorite. Unfortunately I don’t have her recipe, which was probably handed down from my Grandmother Anna, but I did find several that sounded similar. It’s not a difficult recipe to follow, although time consuming to make. I used some Meyer Lemons, from my recent trip to Arizona, which made it an extra special treat. Sweet, tart and fluffy… my new Springtime favorite dessert!
